Eileen's featured recipes this week are crumb cakes.
GRAHAM CRACKER APPLE CRUMB CAKE
1 pkg. yellow cake mix
1 1/3 cup water
1/3 cup butter or margarine, softened
3/4 cup graham cracker crumbs
1 1/2 teaspoon cinnamon
2 1/2 cup pared, chopped apples
1/2 cup brown sugar
2 tablespoons butter
2 tablespoons flour
Heat oven to 350. Grease a 9X13 pan. In a bowl of an electric mixer combine the cake mix, water, butter, eggs graham cracker crumbs and cinnamon. Beat on low for 2 to 3 minutes scraping the sides of the bowl often. Fold in the chopped apples by hand. Pour the batter into the greased pan. In a bowl combine the brown sugar, butter and flour. Sprinkle the mixture evenly over the top of the cake. Bake until cake pulls away from sides of pan and toothpick comes out clean. Cool completely. Serves 10 to 12.
CHERRY ALMOND CRUMB CAKE
Luscious and simple. Using pie filling makes this recipe easy enough for a child to make.
1 1/2 cup sugar
3/4 teaspoon salt
3 teaspoon baking powder
3 cup flour
1 teaspoon almond extract
1 1/2 sticks butter or margarine
1 lg. can cherry, blueberry or apple pie filling
1/2 cup slivered almonds
